Typically, when an account contacts us at PHCP for a beverage program review, we aren’t sure what we will find. At Famous Dave’s we were pleasantly surprised and excited about the program opportunities.
GETTING TO KNOW YOU
Our trusted team set out to Minneapolis where Famous Dave’s corporate headquarters is located to get to know the brand, soak up the company’s culture, and see what parts of their beverage program needed fine tuning. PHCP was pleasantly surprised to see that the Famous Dave’s bartending teams in the restaurants were very talented in mixology and did things the right way by utilizing fresh-pressed juices, taking a hands-on approach to their bartending, and accurately and efficiently making the cocktails. The bartenders were not only acing the test operationally, they were also extremely friendly and hospitable, creating a fun atmosphere that made guests want to stay longer.
MAKING A GREAT PROGRAM EVEN BETTER
At a barbecue restaurant, food comes out fast. Most dishes have already been smoked for hours and are ready to eat or be served as soon as the guests order, not leaving much time for a bartender to create the cocktails and servers to deliver them before the food hits the table. The key was to simplify the drink-making process by reducing the number of steps in the cocktail building during peak hours and removing extraneous ingredients from the bar pantry list.
PHCP also dove into their beverage sales mix and looked at industry trends to determine which of their drinks should be replaced and what types of new drinks should be considered for the next menu. PHCP’s recommendations included: increasing the number of brown-spirit cocktails, calling out the use of fresh ingredients on their menu, including an upsell option, and featuring limited-time-offer cocktails throughout the year. When comparing the Famous Dave’s cocktail menu to other similar accounts, we noticed that the number of cocktails offered was much lower than their competition’s. We suggested that by increasing the number of cocktails offered, Famous Dave’s could further show off their bartenders’ high-level skills as well as appeal to a wider audience of cocktail drinkers. PHCP’s stellar mixologists created six new cocktail recipes that Famous Dave’s could consider including in their new menu.
BRIGHT FUTURE AHEAD
Although changes to the menu are still in the works, PHCP is confident that this already-excellent beverage program will ascend to the next level. Keep an eye out in 2019 for new cocktail offerings, especially the soon-to-be Famous Bloody Mary!
